Very Easy Mackerel Carbonara Recipe

Let's admit, holidays are already over. Most of us, I believe have already kept our Christmas Decoration but not all things can be kept, like food. We have a lot of uncooked pasta. We're just 3 people in our household, that's why I need to think of a way to cook pasta and make a sauce that's really affordable that it won't sacrifice the taste. 


I came up with this amazing idea to change the typical Carbonara's ingredient- Ham and Bacon into a healthier ingredient- Mackerel Tuna.


MACKEREL CARBONARA RECIPE
This can serve up to 4 to 6 people

Ingredients: 
  • 1 can of 425g Uni-Pak Mackerel in Natural Oil, drained and flaked
  • 1 can evaporate milk
  • 1 can slice button mushroom
  • 250ml all purpose cream
  • 1 can cream of mushroom soup
  • 1 whole garlic, minced
  • 1 whole onion, minced
  • Butter
  • 250g grated cheese
  • Uncooked pasta
  • Parsley, chopped (optional)

I kind of flaked my mackerel too little because I'll feed it to Edmund (my son) so I tend to feed him little foods especially meats

Procedure:
  • Bring water to a boil, put some salt then cook the pasta (follow the package for the complete procedure)
  • In a separate pan, sauté garlic and onion in butter
  • Add mackerel chunks or flakes and sliced mushrooms
  • Add evaporated milk, cream of mushroom, all-purpose cream and cheese, stir well until everything is well blended
  • Add salt and pepper to taste
  • If the sauce is too creamy or salty pour some water
  • Simmer until the sauce thickens
  • Serve with pasta, topped with grated cheese and parsley
  • Enjoy

Surprisingly, my son liked this recipe and ate many and I'm really happy and rest assured that I'll be making more of this to my families.This is also my favorite food and I have finally cooked it for the first time, so I'm really proud of myself.
